The Creator

Chef Javier Plascencia hails from Tijuana, a popular city in Baja California, Mexico, that borders the U.S. state of California.   

His career spans 30 years, and he has not only made a name for himself as the most famous chef from Tijuana but has been nominated for a James Beard award and was named Chef of the Year by Guía México Gastronómico, the Gastronomic Mexican Guide.

The Concept 

The goal of Chef Javier Plascencia is to bring the flavors of Baja California to Los Cabos.   

He prides himself on using only local ingredients, including produce from local growers, to bring guests a true taste of the Baja region.

The Menu 

The menu at Animalon by the Sea is a pre-fixe, or tasting-style menu that highlights the highly skilled techniques of Chef Javier Plascencia.   

It includes an appetizer, four courses, and a dessert for $160, not including drinks, and guests can add a five-course wine pairing for another $62 per person.   

On the menu, you’ll find a variety of items, including local seafood, steak, pork, and corn, and a delicious dessert that incorporates flavors like coconut, orange, and white chocolate.

The Experience 

The Animalon by the Sea dining experience is a three-hour journey that takes place aboard a luxury 49-foot boat.   

It departs from the marina in Cabo San Lucas and sails through the Sea of Cortez past iconic landmarks that every Los Cabos visitor should see.   

On the holistic journey, you’ll see Lover’s Beach, the Arch of Cabo San Lucas, and more while dining on an authentic gourmet meal.
