Los Cabos is known for its long list of luxury all-inclusive resorts that offer some fantastic gourmet dining options, but there are some really great restaurants outside of the resorts too. One of these restaurants, and the chef behind it, was recently honored with a very prestigious award by the American Academy of Hospitality Sciences. Located in San Jose del Cabo, this Los Cabos restaurant is now recognized as one of the best in the world.
The Los Cabos Restaurant
The restaurant named Don Sanchez, located in the downtown area of San Jose del Cabo, is the brainchild of Chef Edgar Roman. It is a contemporary Mexican restaurant that features a menu developed out of a drive to offer the flavors of the Baja California Peninsula while focusing on sustainability. This is achieved by utilizing local and regional ingredients like organic vegetables, seafood from the region, and animals raised locally.
The Menu
The farm-to-table dishes you’ll find on the menu at Don Sanchez are nothing if not creative and include seafood, meat, and vegetable-based options. Dishes like Lobster Risotto, Wood Oven Roasted Pork Shank, and Tuber Ceviche, a vegetarian spin on the popular dish made with root vegetables, provide a unique spin on Mexican cuisine. The restaurant is also known for having a great selection of tequila and mezcal, the perfect addition to round out a fantastic, authentically Mexican meal.

The light-colored wood, the wide openness, the high ceilings, and the natural elements like the thatch-style roof blend perfectly with the surroundings. Chef Edgar Roman has had a long and successful career leading up to this ultimate achievement. After graduating from Universidad Iberoamericana, he studied with and learned from some of the best chefs in the world before launching his career in Mexico City. He then relocated to Los Cabos and began making a name for himself in restaurants at well-known high-end resorts like Cachet Beach Hotel and Pueblo Bonito and working with the Mi Casa Restaurant Group.

The Award
The American Academy of Hospitality Sciences was formed in 1949 in Chicago, Illinois as an international restaurant rating organization. Today, though, the organization rates not only restaurants but products, destinations, cruise lines, airlines, golf courses, spas, and hotels. The academy, which is made up of hospitality industry experts in all categories, awards five-star and six-star establishments with the International Star Diamond Award.
What This Means For The Los Cabos Chef And The Restaurant
There has been no chef in Mexico in history that has previously been awarded the International Five Star Diamond Award. Receiving it on top of having his restaurant, Don Sanchez, also being awarded the Five Star Diamond Award, puts Chef Edgar Roman in a position to promote his unique style of cuisine. His menu, which changes seasonally and focuses on the use of fresh ingredients, allows visitors to connect with the Baja California community through ingredients native to the region.
Don Sanchez is also a part of a very important Los Cabos restaurant group with a number of fantastic establishments in its repertoire. Edith’s Group is responsible for such popular places as Tres Sirenas, La Pintada, The Office, and, namely, Edith’s. Only one, though, has earned this most prestigious award, the International Five Star Diamond Award, the restaurant and the chef himself, Don Sanchez, by Chef Edgar Roman.

We were there in October and it was fabulous! The service was exceptional and the meal was absolutely delightful. We finished off with a flaming coffee, beautifully orchestrated!
