If you’ve been waiting for the moment to do Cabo in full-on luxury mode, this is it.
We at The Cabo Sun are hyped because Waldorf Astoria Los Cabos Pedregal—the cliffside icon with private plunge pools and jaw-dropping sunsets—is officially reopening October 1 after a multi-year glow-up.
Get ready for a new look, leveled-up dining, and a spa refresh without losing that soul-of-Baja vibe that made it a favorite in the first place.

The Headline Upgrades (A.K.A. Why We’re Excited)
Full accommodations refresh.
All 112 rooms, suites, casitas, and villas got a floor-to-ceiling redesign led by the resort’s original designer Paul Duesing—lighter coastal neutrals, custom Mexican-made furnishings, and curated local art (look for a mural by Baja artist Tanya Talamante). Translation: modern polish without losing the sense of place.
Culinary reinvention.
Beyond a refreshed Don Manuel’s, you’ll now find three experiences worth planning your nights around: TRAVESÍA, a nine-course taco tasting (yes, nine), the mezcal-forward Agave Study at Peacock Alley, and the new Neutral Coffee Lab for elevated coffee rituals.
Spa glow-up & wellness.
The Waldorf Astoria Spa salon has a new look, and the resort is continuing its Alo Moves programming—think expert-led movement and mindfulness plus restorative touches like the salt-water meditation pool.

What Hasn’t Changed (And We’re Glad)
- Every accommodation still has its own plunge pool and Pacific views. That’s Pedregal’s superpower—and it’s staying.
- That dramatic cliffside dinner at El Farallón. Sunset, waves, lanterns, seafood caught that day—arguably the most “this is Cabo” dinner on earth. Book it early.
- The iconic private tunnel arrival. Roll through the torch-lit Dos Mares tunnel and pop out to ocean views within minutes of downtown Cabo and the marina. The entry still gives goosebumps.

Deep Dive: Eat & Drink Your Way Through Pedregal 2.0
- TRAVESÍA (nine courses of taco joy): A chef-driven tasting that riffs on Mexico’s regions—birria with wagyu cheeks, suadero with craft pairings, and a playful dessert taco to finish. Reservations required; it’s intimate and wildly fun.
- Agave Study at Peacock Alley: A guided journey through tequila, mezcal, raicilla, and more—often with rare labels and ocean views. Consider it your mezcal masterclass with Baja swagger.
- Neutral Coffee Lab: From origins and brewing methods to a full coffee-tasting flight, this isn’t just “grab a latte”—it’s coffee culture, told the Mexican way. (And yes, it’s open late afternoons now.)
- Don Manuel’s & El Farallón: The signature restaurant leveled up its take on traditional flavors, while El Farallón keeps its cliffside spectacle and market-style seafood selection.

Spa & Wellness: The Reset You Crave
Alongside the salon refresh, the spa continues its holistic, element-inspired rituals (moon phases included). If you’re a “vacation = exhale” person, pair a treatment with time in the salt-water meditation pool and browse upcoming Alo Moves retreat dates for a three-day mind-body reset.
Rooms, Suites, Villas: Who Should Book What?
- Rooms & Suites: Ideal for couples who want that indoor-outdoor flow—private terrace, plunge pool, ocean soundtrack.
- Casitas & Villas: Friends’ getaways or families that want space and kitchens without giving up service. You still get butler-level attention and your own pool.
Handy Planning Notes
- Reopening date: October 1 (the resort closed Jul 15–Sep 30 to finish the project). If your trip falls in that window, pivot—otherwise, you’re good from October onward.
- Rates & demand: Rates start around $1,214 per night and fall/holiday dates move fast—book early if you’re eyeing a long weekend.
- Beach reality check: Like many Pacific-side Cabo beaches, Pedregal’s isn’t swimmable due to strong currents. You’ll live at the oceanfront pools and your plunge—then pop to Médano or other swimmable spots when you want a dip.
- Where it sits: Cliffside on the Pacific, minutes from the marina and downtown. That means easy taco crawls and boat days—with the luxury of ducking back into your quiet bubble after.

How We’d Do It (From One Cabo Fan To Another)
- Night 1: Sunset at El Farallón → nightcap at Agave Study (ask for a tasting that hops regions).
- Day 2: Lazy morning at your plunge pool → Neutral Coffee Lab tasting → spa ritual + meditation pool → TRAVESÍA for the taco odyssey.
- Day 3: Boat day from the marina or a quick trip to a swimmable beach; finish with guac-on-the-balcony vibes back “home.” (This place is built for lingering.)
Why This Reopening Matters For Cabo
Cabo’s luxury scene is stacked—and Pedregal keeps earning love from big-name lists (it scored among Travel + Leisure readers’ best resorts in Mexico this year).
The refresh isn’t a reinvention; it’s a recommitment to what made the resort special, with smarter design and deeper culinary/wellness programming layered on top. That’s why we’re calling this the fall comeback to watch.
