Michelin-Recognized farm-to-table darling Acre is stepping into a new era – and it smells like wood smoke, fresh herbs, and just-picked tomatoes.
We at The Cabo Sun have been talking for a while now about how Los Cabos has evolved into a full-blown farm-to-table capital, with micro-farms in the foothills feeding some of the region’s most in-demand restaurants.
Now Acre is doubling down on that reputation with Rústico, a new open-air garden restaurant hidden in the heart of its 25-acre organic property outside San José del Cabo.

Acre’s Green Star glow-up
If you haven’t made the pilgrimage out to Acre yet, here’s the quick download. Tucked into the palm-filled community of Ánimas Bajas, the resort helped kick-start the off-resort farm-to-table movement in Los Cabos nearly a decade ago, long before “garden-to-glass” was plastered across menus.
That commitment to growing and sourcing responsibly paid off in a big way when Acre’s restaurant was awarded a MICHELIN Green Star, recognizing its low-impact, sustainability-driven approach – from regenerative gardens to smart water use and a hyper-local pantry.
We’ve already highlighted Acre as one of the standout eco-luxury stays where you can sleep in treehouses, brunch under mango trees, and feel good about your carbon math. Rústico feels like the natural next step in that story.
What Rústico actually is (and why food lovers should care)
Instead of tucking the new restaurant into a traditional dining room, Acre dropped Rústico right in the middle of its circular garden. Picture long tables under the stars, olive and fruit trees around you, and wood-fired grills perfuming the entire space.
According to the team, the idea is simple: let open-flame cooking and ultra-fresh produce define the experience. Expect a prix-fixe menu that changes frequently based on what’s growing a few steps away and what local fishermen bring in that week, rather than a huge static list.
From the launch details, here’s the kind of thing you can look forward to (all subject to change, of course):
- Shared starters like house sourdough, bright cucumber-radish salads, and herb-marinated olives
- Wood-grilled mains such as New York steak or Baja sea bass over the fire
- Desserts that fold in Acre’s own espadín mezcal – think grilled pineapple or a mezcal-kissed flan
It’s very much that sweet spot Acre is known for: rustic in technique, refined in presentation, with bold Baja flavors rather than fussy plating.
Launching with Baja wine royalty
To celebrate Rústico’s debut, Acre lined up a series of intimate winemaker dinners with some of Mexico’s most respected producers from Valle de Guadalupe and Coahuila.
The first events pair the garden-fire menu with bottles from names like Monte Xanic, Bodega Los Cedros, and La Lomita, giving travelers a crash course in the country’s rising wine scene without leaving Los Cabos.
If you’re the type of traveler already plotting a food-and-wine itinerary using our guides to award-winning restaurants around the cape, Rústico is a very easy add to the list.

How to visit Rústico on your Cabo trip
A few practical tips before you plug this into your Google Maps:
- Getting there: Acre sits in the hills outside San José del Cabo, along the same rural road as Flora Farms and other garden restaurants. You’ll want a taxi, private driver, or rental car – those dirt-road arrivals are part of the charm, but not ideal for a last-minute rideshare. Our farm-to-table guide has more on how to plan transport smartly.
- Reservations: The restaurant is launching with limited nightly seating and a prix-fixe format, so advance reservations are key, especially in high season. If you’re already using our 3-tool Cabo trip “cheat sheet” to plan, add Rústico to your must-book-before-you-fly list.
- Schedule & vibe: Rústico is designed primarily as a dinner and special-event space, with casual garden suppers earlier in the week and the flexibility to host private celebrations on select nights. Think dressed-up-casual: sundresses, linen shirts, sandals that can handle a garden path.
Stay the night (or make it your culinary home base)
One of the biggest advantages Rústico has over a standalone restaurant is everything else wrapped around it.
Acre has evolved into a full resort, with treehouse suites on stilts, villas, and haciendas with private pools scattered around the orchards, plus a jungle pool, cocktail bar, coffeehouse, and even pickleball courts and pottery workshops.
In past coverage we’ve even pointed out that Acre can be surprisingly good value during certain seasons compared to big beachfront resorts, especially if you time your trip right and aim for shoulder-season midweek nights. If food is the main event of your vacation, basing yourself here and exploring the rest of Los Cabos’ foodie scene by day – from Michelin-starred tasting menus in the corridor to taco-stand legends in town – makes a lot of sense.

Where Rústico fits into Cabo’s bigger foodie story
Zoom out, and Rústico is another sign of how Los Cabos keeps upping its culinary game. We’ve already documented how the region has gone from “resort buffets and tacos on the beach” to a destination dotted with Michelin-recognized kitchens, sustainability-focused hotels, and restaurants ranked among the best in the world.
Rústico leans hard into what makes Cabo special right now:
- ingredients grown or sourced within a short drive,
- serious attention to sustainability, and
- the kind of alfresco setting you simply can’t replicate in a city.
If you’re planning a trip and food is even remotely part of your motivation, we’d put Acre – and its new garden restaurant Rústico – near the top of your reservation list.
